Similar to Cherry Chapstick (Summer/ Fall '10) our latest offering is a blend heavily weighted with a fully washed coffee from El Salvador.  However unlike last year's Cherry Chapstick we've removed the washed Sidama and replaced it with a fully washed coffee from El Quetzal in the Matagalapa region of Nicaragua.  The base, a 100% bourbon comes from El Carmen in the Apaneca-Ilamatepec region of El Salvador.  With the final ratio of 75% El Carmen/ 25% El Quetzal, we've found that 18.5 grams of coffee, 22 seconds brew time, and a yield of 28 grams has produced amazing shots beginning with deep citrus and honey aromatics which lead to an intricate acidity with pronounced hints of bourbon-soaked cherries and fresh ground clove.  A spiced molasses-like body balances this espresso while ushering a clean finish of semi-sweet bakers chocolate.
